The Grapevine: Spring has Sprung

The calendar says Spring has sprung but I continue to look out my window and see snow..No complaining as I did enjoy a couple of really pretty warm days.  I keep telling myself its coming and when it gets here I promise not to complain when the temperature reached the 90's.
 
Special tribute to two special ladies.  First to Norma Haymond who is celebrating her 90th birthday.  What a special lady.   I met Norma 25 or more years ago when her son, Ron, married my niece Vanessa.  Since that time she is just a part of our family.  She fit right in with us and we especially appreciated her when she came to a family gathering with her scalloped potato casserole.  Recently she had knee surgery, but it did not slow her down.  Keep going Norma and many more in good health. 
 
The second lady is Betty Hagi who is retiring.  It seems that Betty and our family go back to the beginning of time but maybe not. She still looks exactly as she did when our children were in school together.  Connie and Candi were the same age as my sons, Mike and Marty.  They were the second set of twins born just weeks apart in our neighborhood. We sat on the bleachers for many years cheering our kids on in basketball and football. We helped on many fundraiser's working side by side and who knows how many cupcakes we made.  Betty's early career found her working at the factory in Broadway and after retiring from there she went to work for the Senior Center. She was dearly loved by all the people she helped. I especially remember how much Mrs. Beverly
Sue Miller, from Shinnston, thought of  her and how helpful Betty was to her. After our school activities were over we worked together for the East View Lady Lions Club. I know that her retirement does not mean she is through, just through checking in with the clock. We will surely see her volunteering at different functions in the community.  I know the members of the Center will miss her but we look forward to continuing to work together.  Betty, enjoy your retirement , you have certainly earned it.
 
A belated Happy Saint Patrick's day to all my Irish friends and to all those who want to be Irish.  I really miss having the opportunity to sing all those Irish songs. Where have the "unicorns" gone and I am sure that Irish eyes are still smiling.
 
I understand that the Girl Scouts are having a hard time reaching their goal in the sell of their cookies.  They are selling them at the Mall and I encourage you to pick up a box or to to support their movement. Let me tell you from experience the cookies are still as delicious as ever.
 
Can you believe that Lent is almost half over.  I have been enjoying eating meatless dishes on Wednesday and Friday. I enjoy it so much that I wonder if this is really sacrifice on my part.  I love egg salad as well as toasted cheese sandwiches using provolone cheese.  I have also made tuna salad sandwiches. Although I love meat, this is really a good change for me. By the way I had some extra onions that I need to use up and I made  some French onion soup.  It really is so simple to make.  For the first time I made some chicken and dumplings from scratch.  Dave gave me a thumbs up on the dumplings.  Usually I use Pillsbury biscuits, but I did not have any so I found a recipe for "made from scratch" in one of my 500 cook books and they were good and easy to make.  The reason I had chicken broth was that I was making chicken pastina soup for me.  I guess the one thing that I will miss when the weather gets hot will be all the delicious soups that I have enjoyed this winter.  Someone said that soup is good for the soul and I really agree. I hope you all are checking your freezer and using up all the chard and kale that you may have frozen and getting the freezer ready for the crops that we will soon be planting.
 
You know I think I really saw some crocus' peaking their little heads up.  A sure sign of Spring.  I have been advised that the column will appear in the papers in Grafton, Weston and Buckhannon as space permits.
